ube-licious pancakes

I used the Krusteaz Buttermilk pancake [from Wal-mart] mix 2-3 cups, 

one pack of the frozen ube from the Asian market, and replaced the water 

with coconut milk.  In order to get the sweetness I was expecting 

I added a 1C of sugar and a teaspoon of vanilla
